I grow enough of my own to last me year to year which is nice.
When exfracting I use low heat and coconut oil. I enjoy the shelf stability of it to keep in a cool place rather than take up my fridge or freezer space. I've had some for 5+years still good. But obviously fresher is better.
Cooking with it is a hit challanging though. Usually just add it to teas after a meal.
