I made a plan to sous vide an entire brisket.

Sous vide is good here bc its a lower temperature so it won't dry out. But I need a silicon bag to hold it (to avoid hot plastic on food). But they don't make anything big enough

But apparently you can melt/fuse silicon to itself and make your own bag.

I have a couple brisket chunks going right now (~21 hours at 155F) and will smoke them for dinner.

If it's good I'll make a big ass bag that can fit a whole brisket
