I have since found out that tuna cans used to be 7oz (and still are at bulk stores like Costco), but most retail tuna cans are now 5oz.

Shrinkflation hit tuna cans around 2008.

So possibly his 10oz recipe is two modern cans. Still, I buy my tuna at Costco, so 7oz it is.
