I work at a steakhouse and recently started making sausage out of all the scraps that usually go straight into the trash.

This is about a month of scraps. It yielded me 40 pounds of sausage and 4 quarts of tallow.

Do any of y’all have any good sausage recipes? This is almost all jalapeño cheddar
