I wouldn't make education the thing. They will have negative associations with school and the outcome.

Come at this sideways. Find something the kids are intestined in and get them to explore that.

I could write an essay at this point buy i hope you get the idea. If its a physical activity get them to teach you, get them to practice. As they get better you can show them how important other knowledge is.

Same for academic subjects, same for art.
If they have an intrest in something develop that intrest. Encouragement and validation is probably the one thing they've never had.
